This is a filling, delicious recipe that comes together with not too much effort. The chili crisp really adds some pop, so don’t slip it! Adapted from Salad Freak.
Ingredients
- 1 head broccoli, cut into florets
- 1 lime
- 1 English cucumber, cut in half lengthwise then sliced into 1/4″ half moons on a bias
- 3 scallions, thinly sliced on a bias
- large handful basil, roughly chopped
- large handful cilantro, roughly chopped
- large handful mint, roughly chopped
- 16 oz package extra firm tofu
- 170 g dried soba noodles
- 1/4 c peanut butter
- 1 T soy sauce
- 1 t fish sauce
- 1 t honey
- 3 T warm water
- chili crisp
Instructions
- Preheat oven to 425 F.
- Line a baking tray with a few paper towels or clean kitchen towels.
- Cut the tofu lengthwise into 4 rectangles, then lay them on top of the towels.
- Cover the tofu with another layer of towels, then put a cast-iron skillet or a plate with something heavy on top.
- Press the tofu for 15-20 minutes, until a decent amount of water has soaked the towels.
- When the tofu is done pressing, line two baking trays with parchment paper. Put the broccoli florets on one and the tofu on the other.
- Drizzle the broccoli and tofu with 3 T of chili crisp oil, no flakes. (Note: if you don’t have chili crisp oil, you can substitute 3 T neutral oil + 2 t red pepper flakes.
- Roast broccoli and tofu – the broccoli is done when it is charred, about 25-30 minutes, and the tofu is done when it is golden brown. Set aside.
- As the broccoli and tofu are baking, bring a medium pot of water to boil.
- Cook soba noodles according to package instructions, then wash thoroughly in cold water until all of the starch is removed. Set aside.
- To make the peanut sauce, mix peanut butter, soy sauce, fish sauce, honey, and juice of 1/2 lime.
- Add warm water, 1 T at a time, until the sauce is thin enough to mix into the noodles.
- To serve, add noodles, cucumber, and peanut sauce in a large bowl, then toss to combine.
- Place noodle mixture in individual bowls, then top with a tofu slice and your desired amount of broccoli, scallions, herbs, and chili crisp.
