This is a delicious, fresh, easy way to prepare extra cucumbers. For the best outcome, use seedless cucumbers, but if you only have seeded ones, simply scoop out the seed and proceed. Also, I double the sauce because I love sauce. Adapted from The Woks of Life.
Ingredients
- 2 seedless cucumbers (about 1.5 lbs)
- 2.5 t sugar
- 1 T sesame oil
- 4 t low sodium soy sauce
- 1.5 tablespoons rice vinegar
- 2 cloves garlic, crushed
- 1 T toasted sesame seeds
- a small handful of chopped cilantro
Instructions
- Wash the cucumbers and pat them dry with a clean towel.
- Make the salad dressing by combining the sugar, sesame oil, soy sauce, rice vinegar, and garlic. Stir until the sugar is completely dissolved, then set aside.
- Lay the cucumber on a cutting board. Using a rolling pin or large wooden spatula, smash the cucumber until it starts to crack open and break into chunks.
- Repeat along its full length, until the cucumber has broken into a few large chunks.
- Cut the larger chunks into bite-sized pieces.
- In a large bowl, toss the cut cucumber with the prepared dressing.
- Garnish with sesame seeds and cilantro.
