Smashed cucumber salad

This is a delicious, fresh, easy way to prepare extra cucumbers. For the best outcome, use seedless cucumbers, but if you only have seeded ones, simply scoop out the seed and proceed. Also, I double the sauce because I love sauce. Adapted from The Woks of Life.

Ingredients

  • 2 seedless cucumbers (about 1.5 lbs)
  • 2.5 t sugar
  • 1 T sesame oil
  • 4 t low sodium soy sauce
  • 1.5 tablespoons rice vinegar
  • 2 cloves garlic, crushed
  • 1 T toasted sesame seeds
  • a small handful of chopped cilantro

Instructions

  1. Wash the cucumbers and pat them dry with a clean towel.
  2. Make the salad dressing by combining the sugar, sesame oil, soy sauce, rice vinegar, and garlic. Stir until the sugar is completely dissolved, then set aside.
  3. Lay the cucumber on a cutting board. Using a rolling pin or large wooden spatula, smash the cucumber until it starts to crack open and break into chunks.
  4. Repeat along its full length, until the cucumber has broken into a few large chunks.
  5. Cut the larger chunks into bite-sized pieces.
  6. In a large bowl, toss the cut cucumber with the prepared dressing.
  7. Garnish with sesame seeds and cilantro.
