Tabouli

A great, healthy side dish for anything, full of herby goodness.  Adapted from Moosewood Cookbook.

Tabouli 1

Ingredients

  • 1 c bulgur
  • 1.5 c boiling water
    1.5 t salt
    1/4 c fresh lemon juice
  • 1-2 cloves garlic, crushed
  • 1/2 c chopped scallions
  • 1/4 c extra virgin olive oil
  • 2 medium tomatoes, diced
  • 1 c fresh parsley, chopped

Instructions

  1. Combine bulgur, boiling water, and salt in a bowl – cover and let stand 15-20 minutes, or until bulgur is chewy.
  2. Combine lemon juice, garlic, and oil, and mix thoroughly.
  3. Combine bulgur, lemon-oil mixture, and vegetables, and refrigerate for 1 hour before serving.
